Celebrate tradition on National Ravioli Day Saturday, March 20th at the legendary Italian restaurant Pazzo! Cucina Italiana on Fifth Avenue South. You can’t get much better than Pazzo! executive chef Abel Tirado’s inventive Ravioli di Casa or Butternut Squash Ravioli, where he makes fresh pasta from scratch daily. These savory raviolis are filled with the perfect combination of roasted butternut squash, creamy basil-mascarpone (Italian cream cheese) and sauteed organic spinach served with a citrus “sugo” and garnished with toasted walnuts. The dish is finished with a dusting of grated walnut biscotti cookies and topped with a crispy basil leaf, available for $17.
“Sugo, which means ‘sauce’ in Italian is traditionally made from ripe tomatoes cooked with extra virgin olive oil, onions and garlic and seasoned,” explains chef Abel, adding it is the base of many classic Italian dishes. “Sugo is the simplest of tomato sauces because it allows the flavors of the ingredients to shine through. At Pazzo!, our citrus sugo is a distinctive recipe of prosciutto, lemon, tomatoes and butter – it’s been on our menu since we opened Pazzo! 25 years ago,” he says.
Pazzo! bar manager Peggy Feldon recommends pairing Ravioli di Casa with Gavi di Gavi, Fontanafredda, Piedmont, Italy 2018, available by-the-glass at $15 or by quartino for $22.
